My Mama’s Granola

Ingredients

  • 8 cups rolled oats
  • 1/2 lb almonds (about a cup)
  • 1 c. walnut pieces
  • 1/2 c. sunflower seeds
  • 1/2 c. pumpkin seeds (pepitas)
  • 1/4 c. sesame seeds
  • 1/4 c. flax seeds
  • 1 c. oil
  • 1 c. maple syrup or honey

Directions

  1. eheat the oven to 350. Get out your sheet pans (this amount takes about 3 cookie sheets) and such so you don’t have to move anything – you will be mixing this with your hands. Put all the dry ingredients in a big bowl and mix them up some. Then pour the oil and syrup/honey over them (tip: if you put oil in the measuring cup first, it helps keep the sticky sweet bit from sticking to it and makes it easier to clean) and mix it up with your hands.

  2. Spread the granola out evenly on the sheet pans, no more than about 3/4" deep. Stick in the oven. Once it starts smelling good (about 10-15 min), you’re going to want to turn it with a spatula about every 5 min so it’ll cook evenly. This is also usually a good opportunity to switch racks, since often ovens don’t quite cook evenly, and that’s the best way to burn it (though having one pan a little burnt around the edges gives the flavor a nice deep character, I think). It’s done when it’s a good golden color (25-35 min). And it’ll smell awesome for the next couple hours. After it’s cool, store in a dry container. You can also mix in any dried fruit or any other such thing after it’s cooled.
