Rum Cake

This is best if prepared at least a day in advance of serving.

Ingredients

  • 1 box butter flavor cake mix (Duncan Hines)
  • 1 small box instant vanilla pudding mix
  • 4 eggs
  • 1/2 cup water
  • 1/2 cup oil (I use Crisco Oil)
  • 1/2 cup light rum
  • 1 cup sugar
  • 1 stick butter (use butter, not margarine)
  • 1/4 cup water
  • 1/4 cup rum

Directions

  1. Preheat oven to 350 degrees.

  2. Grease and flour a bundt pan. (Don’t use cooking spray-won’t come out well.)

  3. Mix first six ingredients for 2 minutes until well blended. Pour into greased and floured bundt pan.

  4. Bake cake in a preheated oven for 50-60 minutes.

  5. After cake is done, boil remaining four ingredients on stove for 2-3 minutes.

  6. Leave cake in pan and pour this sauce on top of cake while cake is still warm. Let this soak for 30-40 minutes. Turn cake out on serving plate. After it cools completely, sift confectioner’s sugar over the top.
