Roasted Red Pepper Bruschetta

Ingredients

  • 1 7 oz. jar roasted red peppers, drained/chopped
  • 1 clove garlic, minced
  • 1 T. olive oil
  • 1 tsp lemon juice
  • 1/4 c. green onion, chopped
  • 1 4oz. pkg. Feta cheese, crumbled
  • 1 loaf French baguette slices, 1/4 in. thick

Directions

  1. Mix peppers, garlic, olive oil, lemon juice, onion, feta cheese and set aside.

  2. Brush baguette slices lightly with olive oil; place on cookies sheet.

  3. Broil on each side until lightly toasted.

  4. Top each toast slice with about 1 T. of red pepper mixture.
