Pumpkin Cookies

Ingredients

  • -1 c. shortening (I used those Crisco sticks)
  • -1 c. sugar
  • -1 c. pumpkin (I used the canned pumpkin)
  • -1 egg
  • -2 c. flour
  • -1 tsp. baking soda
  • -1 tsp. vanilla
  • -1 tsp. cinnamon
  • -1/2 tsp. salt
  • Frosting:
  • -1 tbsp. vanilla
  • -1 lb. powdered sugar
  • -1 stick butter
  • -8 oz. cream cheese

Directions

  1. Cream shortening, sugar, and pumpkin. Add egg and mix well. Add sifted dry ingredients. Drop from spoon onto cookie sheet. Bake at 375˚ for 10-12 minutes.

  2. Beat frosting ingredients until smooth. Frost cookies after they have cooked. I went ahead and added a sprinkle of cinnamon on top after frosting them.

  3. there is more than 1 c. of pumpkin in the can so I think I ended up making 2 batches with it and had lots of frosting left over because it just makes a whole lot.
