White Chicken Chili

Serve with chips & salsa, sour cream, cheese and corn bread

Ingredients

  • 30 oz Great Northern Beans
  • 1 T vinegar
  • 1 medium sweet Onion
  • 2 cloves garlic
  • 2 lbs chicken breasts, chunked
  • 16 oz white corn
  • 2 tsp cumin
  • 1/2 tsp oregano
  • 4 oz green chilis, chopped
  • 1 1/2 cups chicken broth
  • 1 lime, juiced
  • 4 tomatillos

Directions

  1. Saute onion and garlice in small amount of vegetable oil

  2. Add chicken and cook until no longer pink

  3. Add all other ingredients and cover

  4. Simmer 20 minutes

  5. add lime jice just before serving

  6. (Also works great in the crock pot)
