Cocoa Cake & Brownie Mix

Ingredients

  • 9 C. all-purpose flour
  • 6 tsp. baking powder
  • 6 tsp. salt
  • 12 1/2 C. sugar
  • 12 oz. unsweetened cocoa powder

Directions

  1. In a large bowl, combine all ingredients. Mix well. Store in an airtight container in a cool dry place. Mix will keep for 2-3 months. Be sure to label and date.

  2. VARIATIONS:

  3. COCOA CAKE – bring 1 C. water and 1/4 C. butter to a boil in a saucepan. In a large bowl, combine hot water and butter with 2 C. mix, 1/4 C. dairy sour cream, 1 beaten egg, 1/2 tsp. baking soda. Blend. Pour into a greased cake pan. Bake at 375 deg for 20 minutes or until done. Makes one layer. Double recipe for a 2 layer cake.

  4. BROWNIES – mix 2 1/4 C. mix , 2 eggs, 1 tsp. vanilla extract, and 1/4 C. melted butter. Blend well. Add 1/2 C. chopped walnuts/pecans if desired. Pour into a greased and floured 8" pan. BAke at 350 deg for 30-35 minutes.

  5. COCOA COOKIES – beat together 1/4 C. melted butter, 2 eggs, and 1/4 C. plus 1 tsp. water. Add 2 1/4 C. mix, 1/2 tsp. baking soda, 3/4 C. flour and 1 tsp. vanilla extract. Drop by teaspoonfuls onto greased cookie sheets, approx. 2" apart. Bake 10-12 minutes at 375 deg, or until edges are brown. Cool. Makes about 3 doz cookies.
