Roasted Shiitakes and Pacific Cod

Pacific cod makes a good environmental choice. Pacific halibut also works, but you may need to reduce the cooking time.

Ingredients

  • 2 lbs shiitake m'rooms, no stems, 1/2d if large
  • 4 tablespoons olive oil
  • 4 sprigs fresh rosemary
  • Coarse salt and ground pepper
  • 4 Pacific cod/halibut fillets (6 to 8 ounces each)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 2 tablespoons finely chopped parsley

Directions

  1. t oven to 450.

  2. On a large rimmed baking sheet, toss mushrooms with 2 tablespoons olive oil and rosemary;

  3. season with salt and pepper.

  4. Roast until tender and browned,

  5. tossing occasionally for about 15 minutes.

  6. Push mushrooms to sides of pan;

  7. place cod in center and season w/ salt+ pepper. Roast until opaque throughout, 8 to 10 mins

  8. Meanwhile, in a small bowl, whisk together remaining oil, lemon juice, mustard, and parsley;

  9. season with salt and pepper.

  10. Serve with cod.
