Chicken Salad

Ingredients

  • v 2 chicken fillets
  • v 4 hard boiled eggs
  • v Spring onions
  • v Salt and pepper
  • v Mayonnaise
  • v Curry powder (optional)

Directions

  1. • Place eggs in pan and cover with cold water, bring to boil then simmer for 12 minutes and cool

  2. • Place pillets in sauce pan, cover with water add spices (onion, parsley, seasoning, salt, pepper)

  3. • Bring to boil and simmer for 5 minutes, then turn off head and leave covered pan on the burner

  4. • When cool, remove fillets and cool further in the fridge

  5. • When cooled, dice chicken, eggs and spring onion

  6. • Mix with mayonnaise till moist, add salt, pepper curry powder to taste
