Holiday Coconut Squares

Ingredients

  • 3 C. cookie mix
  • 2 eggs
  • 1 T. lemon rind
  • 1 C. shredded coconut
  • 3/4 C. finely chopped pecans or walnuts
  • 1/2 C. finely chopped red candied cherries
  • sugar, as needed

Directions

  1. Preheat oven to 350 deg. Generously grease a 9×13×2″ baking pan.

  2. In large bowl, mix together cookie mix, eggs and lemon rind. Stir in coconut, pecans and cherries.

  3. Spread in prepared baking pan. Bake 20-25 minutes. When done, center should spring back when pressed lightly.

  4. While warm, cut into 1 1/2" squares. Sprinkle with sugar. Makes 48 squares.
