Averie’s Vegan No-Bake Pumpkin Pie (Gluten & Soy Free)

Ingredients

  • First make your crust.
  • Crust
  • 2 c Almond Meal
  • 1/4 c Agave
  • 3 Medjool Dates
  • Filling
  • 2/3rd’s can (about 1 cup) Pumpkin Puree
  • 1/4 c Nut Milk
  • 1/3 c brown sugar
  • 1 Tsp Cinnamon
  • 1 Tsp Pumpkin Pie Spice Blend (I used TJ’s)
  • 1 Tsp Vanilla Extract

Directions

  1. Combine all ingredients & Blend

  2. Scoop filling into pie crust and place in fridge or freezer to set up. You’re done!
