Hamburger Stew

Serves 4 people

Ingredients

  • 1/2 lb. ground beef
  • 1 T. oil
  • 3 cloves garlic
  • 1/2 an onion
  • 2 carrots
  • 3/4 cup frozen peas
  • salt
  • pepper
  • thyme
  • garlic powder
  • cayenne
  • dash of soy sauce
  • 3 cups water
  • 3-4 T. cornstarch
  • 1/4 cup cold water
  • potatoes
  • water
  • milk
  • salt
  • butter
  • cream cheese

Directions

  1. Chop onion, garlic.

  2. Slice carrots and celery on a diagonal.

  3. Peel potatoes, dice, and put them in a pot with water to cover.

  4. Brown ground beef in a large pot, add oil if necessary. Drain fat if necessary.Season.

  5. Add onion and garlic, fry till fragrant.

  6. Add rest of veggies and cook 5 minutes.

  7. Season to taste. Add water. Add soy sauce.

  8. Cover and simmer on low until veggies are soft.

  9. Mix a slurry of cornstarch and cold water.

  10. Add to boiling stew, stirring constantly.

  11. Cook a few more minutes. Check seasoning.

  12. Meanwhile boil potatoes till tender.

  13. Drain, season, add butter and cream cheese, mash.

  14. Serve thickened “stew” over hot mashed potatoes.
