CROCKPOT-Beer Brisket

Ingredients

  • 3 pounds lean beef roast
  • 2 onions, sliced
  • 1 bay leaf
  • 1 cup beer
  • 1/4 cup chili sauce (can use salsa instead)
  • 2 tablespoons brown sugar
  • 1/2 teaspoon dried thyme, crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 clove garlic, minced
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

  1. Trim fat from roast

  2. Cut to fit crock pot

  3. Put meat in, cover with onions, bay leaf

  4. Combine beer, chili sauce, sugar, thyme, salt, pepper, and garlic; pour over meat

  5. Cover and cook on low for 10-12 hours or high for 5-6 hours.

  6. Transfer meat to platter and keep warm

  7. Discard bay leaf

  8. Skim fat from cooking juices

  9. Measure 2 1/2 cup juices and place in a saucepan

  10. Combine cornstarch and water; add to saucepan

  11. Cook and stir till thick and bubbly

  12. Cook for 2 minutes more

  13. Pass with meat.
