Corn and Bacon Casserole

Ingredients

  • 6 slices bacon
  • 1/2 cup chopped onion
  • 2 tablespoons all-purpose flour
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup sour cream
  • 3 1/2 cups fresh corn or 3 1/2 cups frozen whole kernel corn
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives

Directions

  1. In a large skillet, cook bacon strips until crisp.

  2. Drain, reserving 2 tablespoons of drippings.

  3. Crumble bacon; set aside.

  4. Saute onion in drippings until tender.

  5. Add flour, garlic, salt, and pepper.

  6. Cook and stir until bubbly; cook and stir 1 minute more.

  7. Remove from the heat and stir in sour cream until smooth.

  8. Add corn, parsley and half of bacon; mix well.

  9. Pour into a 1 quart baking dish.

  10. Sprinkle with remaining bacon.

  11. Bake, uncovered, at 350 degrees for 20-25 minutes or until heated through.

  12. Sprinkle with chives.
