Corn and Smoked Mozzarella Mashed Potatoes

Ingredients

  • 3 cups fresh corn kernels
  • 2 1/2 lbs red potatoes, quartered
  • 3/4 cup 2% low-fat milk
  • 1/2 cup shredded smoked mozzarella cheese
  • 3 tablespoons butter, softened
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 3/4 teaspoon salt
  • 1/2 teaspoon fresh ground pepper

Directions

  1. Heat a large nonstick skillet coated with cooking spray over medium-high heat.

  2. Add in the corn; stir/saute 5 minutes or until lightly browned; cool.

  3. Place potatoes in a saucepan; add water to cover.

  4. Bring to a boil; lower heat, simmer 15 minutes or until tender.

  5. Drain and return potatoes to pan.

  6. Add milk, cheese, and butter; mash to desired consistency.

  7. Cook 2 minutes, stirring constantly.

  8. Stir in corn, cilantro, and remaining ingredients.
