Green Potato Salad

Ingredients

  • 1 1/2 Lbs Potatoes
  • 1 Large Ripe Avocado
  • 1/3 Cup Diced Onion
  • 1 TBSP Lemon Juice
  • Kosher, Himalayan, Aromatic or Sea Salt
  • Black Pepper

Directions

  1. Quarter & steam potatoes until fork tender, about 10 minutes. Leave on skin, cut

  2. into chunks & cool potatoes in refrigerator. In a large bowl mash avocado, stir

  3. in onion & lemon juice. Add salt & pepper to taste. Add potatoes & toss gently

  4. to coat. You can add a little FOCC to it if you like also.
