Sunday Surprise Cake

Ingredients

  • 1 3/4 cups cake flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 1/4 sticks unsalted butter, at room temperature cut inot 1/2-inch pieces
  • 3/4 cups granulated sugar
  • 1/2 cup firmly packed light-brown sugar
  • 3 large eggs
  • 1 cup sour cream
  • Confectioners' sugar

Directions

  1. Preheat oven to 350 degrees. Line a 9-inch square pan with parchment; butter sides and bottom of parchment

  2. In a large bowl, sigt flour, baking powder, salt, and cinnamon. Set aside.

  3. Using a mixer, beat butter and sugars on medium until light and fluffy, 2 minutes. Add eggs, one at a time; beat until just mixed. Turn mixer to low; add flour in three parts, alternating with sour cream and ending with flour.

  4. Pour batter into prepared pan; bake 35-40 minutes, or until a toothpick comes out clean. Cool pan on wir rack at least 20 minutes. To remove cake, loosen sides, then turn onot rack. Peel off parchment and flip cake right side up. Let cool completely. Sprinkle with confectioners’ sugar.
