Cranberry Cornbread

Ingredients

  • 1 1/4 cups all-purpose flour
  • 3/4 cup cornmeal
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 1 cup chopped fresh cranberries or 1 cup frozen cranberries
  • 2 tablespoons sugar

Directions

  1. Preheat oven to 400°; grease bottom and sides of 8-inch square pan with shortening or cooking spray.

  2. In a bowl, combine flour, cornmeal, 1/3 cup sugar, baking powder, and salt.

  3. Add in eggs, milk, and oil; beat with a spoon until mixed.

  4. In a small bowl, toss cranberries with 2 T sugar until coated; fold into batter.

  5. Transfer batter to pan; smooth top.

  6. Bake 25-30 minutes or until pick comes out clean; serve warm
