Berry and Peach Cobbler

Ingredients

  • Fruit:
  • 6-8 peaches (about 6 c sliced)
  • 2 c blackberries, blueberries or others
  • 3 T maple syrup or brown sugar
  • 3 T cornstarch or 5-6 T all-purpose flour
  • 1/4 t cinnamon
  • Topping:
  • 1 c all-purpose flour or ww pastry flour
  • 2/3 c corn flour
  • 2 t baking powder
  • 1/4 c maple sugar or white or light brown
  • 1/4 t salt
  • 5 T cold butter
  • 2 large eggs
  • 1/2 t vanilla extract
  • 3/4 c buttermilk

Directions

  1. eheat oven to 400.

  2. Lightly butter 2 1/2 qt baking dish.

  3. Dip peaches into boiling water for 5-10 sec, then pull off their skins.

  4. Pit and slice the peaches and put into bowl with berries.

  5. Toss with sugar, cornstarch and cinnamon.

  6. Let stand.

  7. Topping:

  8. Mix flour, corn flour, baking powder, sugar and salt in bowl.

  9. Cut in butter with fingers.

  10. Beat eggs, vanilla and buttermilk.

  11. Lightly stir wet mix with flour. It will be wet.

  12. Transfer fruit to baking dish.

  13. Drop cobbler batter by small spoonfuls over the top, covering the entire surface.

  14. Bake in center of oven until topping is golden brown adn juices are bubbling around edge, about 25 min.

  15. Let cool and settle for at least 20 min before serving.
