Potato Cakes

Ingredients

  • Instant mashed potato puffs (4 servings)
  • 1/3 c shredded cheddar cheese
  • 1/4 c plus 2 T cracker crumbs
  • 1 egg, slightly beaten
  • 2 T snipped parsley
  • 1 tsp finely chopped onion
  • 1/2 tsp fines herbs (see note)
  • 1/4 tsp salt
  • 1 T oil

Directions

  1. Prepare potato puffs as directed; cool. Mix potatoes and remaining ing except oil. Heat oil in skillet. Drop potato mixure by rounded tablespoons into skillet. Flatten with spatula and fry over medium heat till lite brown, abt 3 minutes on each side; drain.

  2. Note: Fines herbs is a mixture of crushed dried leaves of thyme, oregano, sage, rosemary, marjoram and basil
