Grilled Quail with Blackberry-Shallot Glaze

Ingredients

  • 1 cup Zinfandel or fruity wine
  • 1/4 cup finely chopped shallots
  • 1/2 tsp cracked black pepper
  • 1/3 cup blackberry jam
  • 2 tsp butter
  • 4 4-oz servings quail
  • 1/2 tsp salt 1/4 tsp black pepper

Directions

  1. Place first 4 ingredients in saucepan over med heat.

  2. Boil and reduce, about 8 min

  3. Strain over bowl eliminating solids. Keep wine mixture.

  4. Add wine mixture and jam to pan over med heat for 2 min.

  5. Remove and stir in butter.

  6. Grill quail with salt and pepper until done. Add 2 tbs glaze to quail and serve.
