Creamy Mushroom Potato Bake

Ingredients

  • 2 1/2-3 lbs white potatoes, peeled
  • 1 onion, finely chopped
  • 1/2 lb fresh mushrooms, chopped
  • 3 tablespoons butter or 3 tablespoons margarine, divided
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup grated parmesan cheese

Directions

  1. In a saucepan of boiling salted water, cook potatoes until tender; drain and mash.

  2. In a skillet, melt 2 tablespoons butter; saute onion and mushrooms for 3-4 minutes or until tender.

  3. Stir into potatoes; add sour cream, salt, and pepper; mix well.

  4. Spoon into a greased 2 quart baking dish.

  5. Sprinkle with Parmesan.

  6. Dot with remaining butter.

  7. Bake, uncovered at 400 degrees for 20-25 minutes or until heated and golden brown.
