  • 1 Jicama, diced
  • 1 can black beans, drained and rinsed
  • 1 can corn (shoepeg), drained
  • 1 red pepper, diced
  • 1 small purple onion, diced
  • 1/2 c Italian dressing
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes
