Reuben Roll-Ups

If you love Reuben Sandwiches you’ll love these! You’ll think these must be horrible for you, but if you use low fat dressing, low fat crescent rolls, and low fat cheese they’re really not that bad at all, but taste awesome! This is fun for a Friday night with the kids and it’s one of like six dishes that my kids will actually eat!

Cook time: 10 minutes

Ingredients

  • 1 pkg. refrigerated crescent rolls (8 rolls)
  • 1 (8 oz.) can sauerkraut, well drained
  • 1 tbsp. Thousand Island salad dressing
  • 8 thin slices (about 4 oz.) cooked corned beef
  • 2 slices process Swiss cheese, cut in 1/2 inch strips

Directions

  1. Unroll crescent roll dough; separate into 8 triangles.

  2. Snip drained sauerkraut in can to cut long strands; combine with salad dressing.

  3. Place one slice corned beef across wide end of triangle.

  4. Spread 2 tablespoons sauerkraut on corned beef; top with 2 strips of cheese.

  5. Roll up, beginning at wide end of triangle. Bake on ungreased baking sheet in moderate oven (375 degrees) for 10 to 15 minutes or until golden brown.

  6. rve hot. Makes 8.
