Spicy Grilled Chicken Breast with Corn Pepper Relish

Substitute fresh cilantro for the parsely if desired

Ingredients

  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1/4 tsp paprika
  • 1/8 tsp ground red pepper
  • 1/8 tsp black pepper
  • 4 (6-oz) skinless, boneless chicken breast
  • 1 tbs canola oil
  • 2 cups whole-kernel corn, thawed
  • 1 cup diced red bell pepper
  • 3 tbs chopped onion
  • 2 tbs minced fresh parsley
  • 2 tbs fresh lime juice

Directions

  1. Combine first 6 ingredients in a small bowl. Rub spice mixture over both sides of chicken breasts.

  2. Heat oil in a grill pan over medium-high heat. Add chicken; cook 5 minutes on each side until done.

  3. While chicken cooks, combine corn and remaining ingredients in a bowl. Serve with chicken.

  4. Yield: 4 servings (serving size 4 chicken breasts and 1/2 cup relish.
