Ingredients

  • Italian sausage out of casing
  • Roasted red pepper x 2
  • 1 bunch spinach
  • 4 cloves garlic
  • fresh parsley
  • fresh basil
  • olive oil
  • 1 can chicken stock
  • 1 can white kidney beans
  • parmeson on top

Directions

  1. Roast peppers – on burner or broil, place in baggie and peel off skin.

  2. Cook sausage.

  3. Mix all ingredients together and cook except for parmeson.

  4. Add parmesan at end.

  5. Serve over rigatoni pasta.
