Chocolate Truffles

Ingredients

  • 3 squares unsweetened baking chocolate
  • 1/3 cup butter, softened
  • 1 1/4 cups powdered sugar, sifted
  • 4 egg yolks
  • 1 teaspoon vanilla
  • cocoa, coconut, ground nuts

Directions

  1. Melt chocolate in double boiler over hot, but not boiling water

  2. Cool slightly

  3. Combine butter and sugar in bowl and beat until smooth.

  4. Beat in egg yolks, one at a time

  5. Stir in cooled chocolate and vanilla

  6. Chill until cool enough to handle.

  7. shape into 1" balls and roll in nuts, cocoa or coconut

  8. Place on cookie sheet to set

  9. Store in tightly covered container in refrigerator for not more than 1 week
