Tropical Carrot Cake

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 can crushed pineapple, lightly drained
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 2 cups grated carrots
  • 1 cup chopped walnuts
  • 4 eggs
  • 2 cups sugar
  • 1 1/4 cups oil
  • 1/2 cup coconut

Directions

  1. Sift together the dry ingredients, except sugar

  2. Prepare carrots, pineapple and nuts

  3. Grease and flour 3 9" round cake pans or a 9 × 13 pan

  4. Preheat oven to 350
  5. Beat eggs lightly and add sugar and pineapple and mix well.

  6. Stir in the walnuts and coconut

  7. Spread evenly in pans

  8. Bake for 40-45 minutes or until sides shrink slightly and top springs back when touched.

  9. Cool layers in pans for 10 minutes, then turn out on wire racks to cool completely
