Zhenya’s baked potato yum

Cook time: 60 minutes
Serves 4 people

Ingredients

  • 1 onion
  • 2 large portabello mushrooms
  • 4 large baking potatoes
  • 1 red pepper
  • 1/2 cup sour cream
  • 1/2 milk
  • 2 tbsp olive oil
  • large bunch of leafy greans
  • some cheese to sprinkle on top
  • salt and pepper to tast

Directions

  1. Saute onions and mushrooms, add to a large pan

  2. cut up potatoes and mix with mushrooms and onions.

  3. Add sour cream and milk, salt to taste and bake until tender

  4. Add cut up pepper and your choice of leafy greans, mix in with the rest of stuff, sprinkle with cheese and bake for another 15-20 min or until cheese is melted (or golden brown).
