Sweet Potatoes

Ingredients

  • 2 cups brown sugar
  • 3 tablespoons corn starch
  • 3 teaspoons salt
  • 1 1/2 teaspoons grated orange peel
  • 3 cups orange juice
  • 6 tablespoons butter

Directions

  1. Parboil potatoes with the skin in boiling and salted water
  2. Remove skins and cut into slices and arrange in

  3. ungreased casserole

  4. In small saucepan, stir sugar, cornstarch, salt and orange peel

  5. Slowly stir in orange juice

  6. Add butter and cook, stirring constantly until it thickens and boils

  7. Boil for 1 minute

  8. Pour over potatoes

  9. Preheat oven to 400
  10. Cover and bake for 1 hour, basting occasionally
