Chestnut Stuffing

Ingredients

  • 3 cups chopped celery
  • 3 onions, chopped
  • 1 pound ground beef
  • olive oil and butter
  • 1 1/2 cups rice
  • 1 tablespoon tomato paste, dissolved in water
  • salt and pepper
  • 1 pound chestnuts, boiled, peeled and chopped
  • pinch of cinnamon
  • pinch of sage
  • 1 teaspoon sugar
  • 1 bag of croutons, soaked in 3 cups water with 2 boullion cubes added
  • optional: raisins

Directions

  1. Chop and saute the onions and celery in oil and butter

  2. Add the ground beef and brown thoroughly

  3. Add rice and cook over low heat

  4. Dissolve tomato paste in water and add to beef mixture

  5. Boil about 10 minutes over low heat

  6. Add salt and pepper

  7. Stir in prepared chestnuts

  8. Add spices

  9. Soak the croutons in the broth

  10. Squeeze out excess water and add to meat mixture

  11. Either stuff turkey or bake in a covered casserole for about an hour, basting occasionally
