Brownies

Ingredients

  • 1 1/2 cups of butter plus 2 Tbsp
  • 12 ounces of bittersweet chocolate (12 cubes, 2 packages)
  • 6 eggs
  • 1 3/4 cups superfine (fine ok) sugar
  • 1 Tbsp vanilla extract
  • 1 1/2 cups of flour plus 2 Tbsp
  • 1 tsp salt
  • 1/2 cup white chocolate chips
  • 1/2 cup semi-sweet chocolate chips

Directions

  1. Preheat oven to 350; 325 if using a glass pan

  2. Melt butter and dark chocolate together in large heavy based pan over low heat

  3. In a bowl beat the eggs together with vanilla and sugar

  4. Allow chocolate mixture to cool a little, then fold in egg mixture, beat well

  5. Fold in flour/salt

  6. Stir in white and semi-sweet chips

  7. Beat to combine then pour into greased pan (size approx 11 × 9 × 2″ deep).

  8. Bake for 26 minutes approx

  9. Done when top dries to a slightly paler brown speckle while middle remains dark, dense and gooey.
