Easy Potato Casserole

Ingredients

  • 1 (32 ounce) package frozen hash brown potatoes, thawed
  • 1 medium onion, chopped
  • 1/2 cup chopped green pepper
  • 1 (10 1/2 ounce) can cream of potato soup
  • 1 (10 1/2 ounce) can cream of celery soup
  • 1 (8 ounce) carton sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded monterey jack cheese

Directions

  1. Combine all ingredients except cheese; stir well.

  2. Spoon potato mixture into a greased shallow 2-quart casserole.

  3. Bake at 325 degrees for 1 hour and 15 minutes.

  4. Sprinkle with cheese, and bake an additional 15 minutes.
