Stroganoff

Serves 4 people

Ingredients

  • 1 cup egg noodles
  • 2 teaspoons olive oil
  • 1/2 lb fresh mushrooms, quartered
  • 1 piece Home Style meatloaf, crumbled
  • 1/2 cup reduced sodium chicken broth
  • 1/2 cup fat-free sour cream
  • 2 tablespoons chopped fresh dill
  • 1/8 teaspoon fresh ground peper

Directions

  1. Cook the noodles according to package directions.

  2. Meanwhile, melt the butter in a large nonstick skillet over medium-high heat. Add the mushrooms and cook, stirring occasionally, until lightly browned, 3-4 minutes. Stir in the meatloaf, broth, sour cream, dill and pepper. Reduce the heat and cook, stirring occasionally, just until heated through, 4-5 minutes. Spoon over noodles and serve.
