Hot Black Bean Dip

Ingredients

  • 2 (15-ounce) cans black beans, drained
  • 1 (10-ounce) can diced tomatoes in sauce
  • 3 chipotle chilies in adobo sauce, finely chopped
  • 1 tablespoon adobo sauce
  • 3 tablespoon finely chopped onion
  • 1/2 teaspoon dried oregano
  • 2 tablespoons chopped fresh cilantro
  • 1 clove garlic, crushed
  • Juice of one lime
  • 1/2 cup crumbled feta cheese

Directions

  1. Combine all ingredients except the cheese in your slow cooker

  2. Cover and cook on high for 1 hour

  3. Gently smash the beans along the side of the crockery

  4. Sprinkle with the cheese, cover, and cook for 30 minutes more

  5. Serve warm with tortilla chips

  6. Makes approximately 4 cups
