Denver Egg Panini

Serves 2 people

Ingredients

  • 2 teaspoons olive oil
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped onion
  • 1/2 cup diced baked ham
  • 2 teaspoons butter
  • 2 eggs, beaten
  • salt
  • fresh ground black pepper
  • 4 slices sourdough bread (1/2 -inch thick slices)
  • 1 tablespoon butter, melted
  • 1/2 cup shredded cheddar cheese

Directions

  1. In a nonstick skillet, heat oil over med-high heat.

  2. Add in green peppers and onion; saute until tender, about 5 minutes.

  3. Add in ham and saute until heated through, 3-4 minutes.

  4. Transfer to a plate and keep warm.

  5. In the same pan, melt 2 t butter over medium heat.

  6. Add eggs, salt, and pepper; scramble until eggs are desired consistency; remove pan from heat and stir in ham mixture.

  7. Brush one side of each bread slice with melted butter.

  8. Place on a work surface, buttered side down.

  9. Divide eggs evenly between two bread slices and top with cheese.

  10. Cover with top halves and press gently to pack.

  11. Place sandwiches in preheated panini grill; close the top plate and cook until golden brown, 3-4 minutes.

  12. Serve immediately.
