Baked Potato Soup

Ingredients

  • 6 large baking potatoes, peeled and cut up
  • 1 onion, chopped
  • 1 can chicken broth
  • 4 Tbsp. butter
  • 1/2 tsp. pepper
  • 1 tsp. garlic salt
  • 1 C. milk (can use half & half or cream)
  • 2 C. sour cream, light or nonfat is OK
  • Cheddar cheese, grated
  • Bacon, crumbled
  • Chives, chopped

Directions

  1. Place potatoes and onion in pot with just enough water to cover. Cook uncovered over medium heat until fork tender.

  2. Drain water. Mash potatoes and onion with fork or hand masher (not an electric mixer). Add broth, butter, pepper and garlic salt. Bring to a boil. Reduce heat to simmer 10 minutes.

  3. Add milk, bring to boil and reduce to simmer 5 more minutes.

  4. Remove from heat and stir in sour cream. Warm through but do not boil.

  5. Top each bowl with cheese, bacon and chives, if desired.
