Pepper Crusted Maple Salmon

I play around with the marinade, the measurements are only a guide, I start with the amounts listed, and adjust to taste from there

Cook time: 7 minutes
Serves 4 people

Categories: entree, fish, tried and true

Ingredients

  • 4 skinless salmon filets
  • 1/4 cup soy sauce
  • 3/4 cup maple syrup
  • fresh ground black pepper

Directions

  1. Mix together the soy sauce and maple syrup in a bowl big enough to hold all the salmon filets (or use a ziploc bag, that generally works for me!). Add the salmon, and marinate at least 5 hours, but preferably overnight.

  2. Preheat oven to 500

  3. Place foil on a baking sheet and oil lightly or spray. Grind pepper into a shallow dish, then take 1 filet, and press the top of the filet into the pepper, forming a pepper crust. Place the filet on the foil, pepper side up, and repeat with remaining filets. Bake on top rack 7 minutes. Syrup may smoke a bit, but don’t worry about that. It’ll be fine. Can also be grilled.
