Bobby’s Green Onion Potato Salad

Ingredients

  • 2 lbs new potatoes, scrubbed
  • 5 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 1/4 cup mayonnaise
  • 2 tbsp white wine vinegar
  • 1 jalapeno, finely diced
  • 6 green onions, green and pale green parts sliced thin
  • 1/4 cup chopped fresh cilantro or flat leaf parsley
  • Dash of onion powder
  • Dash of garlic power

Directions

  1. Place the potatoes in a large saucepan with enough cold water to cover by 2 inches and 1 tbsp of salt. Boil until just cooked. Drain well and let cool a few minutes. Slice into 1/4-inch thick slices.

  2. Whisk the mayonnaise, vinegar, jalapenos, 2 tsp of salt and 1/2 tsp of pepper together in a a large bowl. Add the potatoes, green onion and cilantro and gently fold to combine. Season with onion powder and garlic powder to taste.
