Couscous Salad

Ingredients

  • 3/4 cup couscous
  • 1/3 tomato-corn mix
  • 1/2 cup chickpeas
  • 2 tbsp cubed feta
  • 1/2 tsp chopped fresh thyme
  • 1/2 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp olive oil

Directions

  1. Prepare couscous as directed on package. Let cool. Stir in remaining ingredients. Season with salt and pepper
