Butter Bean Salad

Serves 5 people

Ingredients

  • 1 15 oz can butter beans (or black beans)
  • 1 pint cherry or grape tomatoes, halved
  • 1 small red onion, diced
  • 1/2 cup diced yellow squash
  • 1/2 cup diced zucchini
  • 1/4 cup minced fresh cilantro
  • optional: 1/2 seedless cucumber, diced
  • Dressing:
  • 3 T olive oil
  • 2 T lemon juice
  • 1 tsp. ground cumin
  • salt and pepper to taste

Directions

  1. Whisk dressing ingredients together in the bottom of a large bowl. Add remaining ingredients, and toss to coat. Chill.
