Turkey-Strawberry Salad

Ingredients

  • 1/4 pound turkey cutlets
  • Dash tsp salt
  • Dash pepper
  • 1/4 tsp olive oil
  • 1 cup halved hulled strawberries (about 6)
  • 1/8 cup fat-free Catalina dressing
  • 1 1/2 cup salad mix

Directions

  1. Season the turkey with the salt and pepper. Heat the oil in a medium nonstick skillet over medium-high heat. Add the turkey and cook until golden and cooked through, 2-3 minutes on each side. Transfer to a cutting board and let cook slightly, about 5 minutes.

  2. Meanwhile, put 1/2 cup of the strawberries and the salad dressing in a blender and puree.

  3. Cut the turkey crosswise into 1/2 inch strips. Place salad mix into a bowl. Top with turkey and dressing. Serve.
