Mexi-Grilled Corn

Ingredients

  • 6 corn on the cobs, unhusked
  • 2 tablespoons fat-free mayonnaise
  • 1/4 teaspoon grated lime zest
  • 2 teaspoons fresh lime juice
  • 3 tablespoons grated Parmesan cheese
  • 1/2 teaspoon ancho chili powder
  • 1/4 teaspoon ground cumin

Directions

  1. Preheat grill to medium heat.

  2. Gently remove the outer layer of the corn husks without removing the inner layer or the silk. Twist off the exposed silk from the top of each cob. Rinse the cobs. Place the corn on the grill rack and grill, turning occasionally, until the corn is cooked and the remaining husks are lightly charred, 12-15 minutes.

  3. Meanwhile, combine the mayonnaise, lime zest, and lime juice in a bowl. Combine the cheese, chili powder, and cumin in another bowl. Set both bowls aside.

  4. Peel the husks and silk from the corn. Brush each cob with about 1 teaspoon of the mayonnaise mixture. Sprinkle each with about 1/2 tablespoon of the cheese mixture. Serve at once.
