Pasta Salad with Grilled Vegetables

Ingredients

  • 3/4 pound ziti or penne
  • 1 zucchini, cut lengthwise into 1/2 inch slices
  • 1/2 small eggplant, peeled and cut lengthwise into 1/2 inch sections
  • 1 red bell pepper, seeded and quartered
  • 2 carrots, cut lengthwise into 1/4 inch slices
  • 1/2 cup finely chopped onion
  • 2 tablespoons olive oil
  • 1 tablespoon plain fat-free yogurt
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper

Directions

  1. Preheat the grill to high heat. Spray a grill basket with nonstick spray.

  2. Cook the ziti according to package directions.

  3. Place the zucchini, eggplant, bell pepper, and carrots in the grill basket. Place the basket on the grill rack and grill until the vegetables are lightly charred and tender, 4-5 minutes on each side. Transfer the vegetables to a cutting board; let cool clightly and cut into bite-size pieces. Add the vegetables and the onion to the ziti.

  4. To make the dressing, combine the remaining ingredients in a bowl, beating with a whisk until blended. Drizzle the dressing over the pasta and toss well to coat. Serve warm.
