Apple-Blueberry Crisp

Ingredients

  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 5 large Golden Delicious apples (2.5 pounds) peeled and cut into 1/2 inch wedges
  • 2 cups fresh blueberries
  • 1 teaspoon grated orange zest
  • 2 tablespoons fresh orange juice
  • 1 (6 1/2 ounce) package cornbread-and-muffin mix
  • 1/2 cup quick cooking oats
  • 1/4 cup packed light brown sugar
  • 1 teaspoon cinnamon
  • 5 tablespoons light stick butter, cut up

Directions

  1. Preheat oven to 375 F.

  2. Combine the granulated sugar and cornstarch in a 9 × 13 inch baking dish. Add the apples, blueberries, orange zest, and orange juice; toss to coat. Then spread in an even layer.

  3. To make topping, combine the cornbread mix, oats, brown sugar, and cinnamon in a medium bowl. Add the butter; mix with fingers until crumbly. Sprinkle the topping evenly over fruit mixture. Bake until the topping is golden and the fruit is bubbly around the edges, about 40 minutes. Let cool on rack 15 minutes. Serve warm.
