Fresh Herb Vinaigrette

Ingredients

  • 3 tablespoons red wine vinegar or 3 tablespoons white wine vinegar
  • 1 shallot, peeled
  • 1 garlic clove, peeled
  • 2 teaspoons Dijon mustard
  • 1 teaspoon fresh thyme
  • salt
  • fresh ground black pepper
  • 10 fresh basil leaves
  • 1 tablespoon fresh oregano (may substitute with tarragon, chives, parsley)
  • 3/4 cup extra-virgin olive oil

Directions

  1. Process vinegar, shallot, garlic, mustard, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper in blender until shallot and garlic are finely chopped, about 15 seconds.

  2. With the blender running, add basil and oregano, the oil, and continue to process until dressing is smooth and emulsified, about 15 seconds.
