Brown Rice Pilaf

Ingredients

  • 1/4 cup chopped green onion
  • 2 teaspoons butter
  • 1 1/3 cups instant brown rice
  • 1/3 cup chopped walnuts
  • 1 1/3 cups water
  • 1/3 cup dried apricot, thinly sliced
  • 1/4 teaspoon salt (to taste)
  • 1/8 teaspoon pepper (to taste)

Directions

  1. In a small saucepan, saute green onions in butter until tender.

  2. Add in rice and walnuts; cook and stir for 1-2 minutes or until walnuts are toasted.

  3. Add in water, apricots, salt, and pepper.

  4. Bring to a boil; decrease heat; cover and simmer for 5 minutes or until liquid is absorbed.

  5. Let stand for 5 minutes; fluff with a fork.

  6. Adjust seasoning to taste with salt and pepper.
