Mushroom, Sausage & Spinach Strudel

Ingredients

  • 3 tablespoons olive oil
  • 1 small onion, chopped
  • 1/4 pound fresh mushrooms, sliced
  • 1/4 cup red bell pepper, chopped
  • 1 clove garlic, minced
  • 1/2 pound cooked sausage
  • 1/2 pound fresh spinach chopped
  • 1/4 cup Swiss cheese, shredded
  • salt and pepper
  • 4 sheets Phyllo dough
  • 1/4 cup butter
  • 3 tablespoons bread crumbs

Directions

  1. Preheat oven to 375
  2. Heat oil in skillet

  3. Add onion, mushrooms, pepper and garlic

  4. Cook and stir until vegetables are soft

  5. Stir in sausage, spinach and cheese

  6. Salt and pepper to taste

  7. Set aside to cool

  8. Place 1 Phyllo sheet on work surface

  9. Brush with melted butter and sprinkle 1/4 of the bread crumbs on top

  10. Repeat layers 3 times

  11. Spread sausage mixture on top

  12. Roll up, starting at short side, until log forms

  13. Place on baking sheet

  14. Brush with remaining butter

  15. Bake for 15 minutes or until golden brown

  16. Let stand 5 minutes before cutting

  17. Cut into 1" slices

  18. Serve hot
