Tuna Quiche

Ingredients

  • 9 inch pie crust
  • 1 tablespoon softened butter
  • 1 medium onion, diced
  • 1 small green pepper, diced
  • 1 can tuna in oil, drained
  • 4 eggs
  • 1 cup half and half
  • 1/2 teaspoon salt

Directions

  1. Preheat oven to 425
  2. Spread crust with 1 tablespoon butter

  3. Cook onion and pepper until tender, stirring occasionally

  4. Remove from heat and add tuna

  5. Spoon into crust

  6. In a bowl with a fork, beat eggs, half and half and salt

  7. Pour into crust

  8. Bake for 15 minutes and turn oven to 325 and bake for 35 minutes more
