Quick Chicken Stir Fry

Ingredients

  • 3 tablespoons oil
  • 3 chicken breasts
  • 1 clove garlic, minced
  • 1 cup broccoli florets
  • 1 cup red bell pepper cut into strips
  • 1 cup carrot cut into strips
  • 1/4 cup green onions, sliced
  • 1/2 cup mayonnaise
  • 1 tablespoon soy sauce
  • 1/2 teaspoon ginger

Directions

  1. Heat oil

  2. Cut up chicken and fry for 3 minutes

  3. Add garlic and vegetables

  4. Cook for 3 minutes

  5. Reduce to medium

  6. Stir in mayonnaise, soy sauce and ginger

  7. Simmer until chicken is cooked through
