Roasted Red Peppers with Feta Cheese

Ingredients

  • 6 red peppers, stemmed, cored and slice in half
  • 6 large garlic cloves (chopped finely)
  • Extra virgin olive oil
  • Flat leaf parsley, finely chopped 1/2 cup
  • Feta Cheese
  • Baguette cut into rounds, toasted

Directions

  1. On a large baking sheet, rub the peppers generously with olive oil, place baking sheet in the broiler and roast peppers until they are blackened (be sure to rotate often)

  2. Place roasted peppers in a bowl and cover with plastic wrap, until cool enough to handle

  3. Remove the skin from the peppers and cut them into 1/2 inch thick strips Place peppers in a bowl a! dd garlic and parsley Add olive oil, enough to coat peppers Season with freshly ground black pepper and sea salt Cover with plastic wrap and marinate over night Remove from refrigerator and bring to room temperature before serving Slice baguette into 2" circles, and spread olive oil on each circle and brown in oven, let cool and place 1 spoonful of roasted peppers on bread and top with crumbled feta cheese.
